Southwest Chicken Chili

2 c. dry white beans
1/2 c dry red beans
Bring to a boil, boil 2 min, set aside for 1 hour then drain
set aside

saute 1 lg onion
2-3 cloves crushed garlic
in 2 T olive oil
Then add: 1 can rotel
2 T cumin
1T chili powder
1 t salt
1 tsp poultry seasoning
1/2 tsp of each: cayenne pepper, coriander, and oregano
Then add
2 cans cream of chicken soup
2 cans chicken broth
2 c. cooked chicken (diced, cubed, whatever)

Mix this with the beans and place in a crock pot. simmer for 3-5 hours being sure to cook the beans fully.
we serve topped w/ shredded cheese, tabasco, dollop of cream cheese and green onion
