Lemon Butter:
8 T butter
2 T lemon juice
4 t white wine
Melt over low heat in small sauce pan-keep warm.
Fish:
2 eggs
1 c. heavy cream
4 (6 oz) fillets of sole or cod (or any white fish)
1 c. flour
4 T butter
Steam--precook a head of fresh broccoli in spears.
Fish: Whisk eggs in heavy cream in large bowl. Dredge fish in the flour, shake off any excess, then place fillets in the batter. Heat 4 T butter in a large heavy bottomed skillet over medium heat. Lift fish out of batter, allow excess to run off, then gently lay fillets in the pan. Cook turning fish once, until flaky and crush is crisp and golden, about 3 min per side.
When fish is done, place in a serving dish with the broccoli and pour lemon butter over all.

This is another recipe I worked for several years to find - and work on - it's right on ! and so very very good !
