1 c. dry small pasta -cooked (pastina, or penne)
2 T olive oil
1/2 c. cubed chicken breast (1 in cubes)
1/2 c. diced onion or shallot
1 clove garlic
1 14.5 oz can diced tomatoes in juice
1 c. shredded mozzarella
1/4 c. feta (or other cheese)
3 oz cream cheese
1/4 c. chopped parsley
1/4 t pepper
1/4 t salt
1/4 c. bread crumbs
1/4 c. grated parm cheese
melted butter
Brown chicken in olive oil. Add onions, garlic and cook til heated thru about 5 minutes. Add chicken to cooked pasta. Add canned tomatoes, mozz, feta, cream cheese, parsley, salt and pepper. Stir.
Bake in a buttered 8x8 casserole.
In small bowl, combine bread crumbs and parmesan. Sprinkle over top and drizzle with melted butter.
Bake about 30 minutes at 400 degrees.
**Mom's secret-pour 1/2 pint whipping cream over the top before cooking.
