1 T all purpose flour
1/4 t salt
4 -3oz thin sliced veal cutlets (1/4 thick)
2 c. marinara sauce
3/4 c. shredded mozzarella cheese (Charlotte uses skim)
2 T grated parm cheese
1/4 t freshly gr pepper
Spray a 12 in nonstick skillet w/ Pam and heat thru.
Meanwhile, on a sheet of wax paper or a plate, mix the flour and salt.
Lightly dredge the veal in flour. Transfer veal to the skillet and saute until golden brown, about 3 min, turn over and saute 1-2 min longer. Pour the marinara sauce around the veal and sprinkle the cutlets with mozz. and parm cheeses.
Reduce heat and simmer, covered, until cheese melts and sauce bubbles, and cutlets are cooked thru. About 3-5 minutes.
Sprinkle with pepper.
(You can use chicken breasts pounded w/ a rolling pen)
Serve with angel hair pasta.
