Black Bean Soup

1 med onion finely chopped
4 med garlic cloves, minced
3 -15 oz canned black beans, undrained
1/2 - 1 t red pepper flakes
1 t ground cumin
14 1/2 oz can rotel
11 oz canned yellow corn, drained

In large stockpot saute onion and garlic about 5 min in olive oil/butter. place one can of beans in blender. add sauteed onion mixture, red pepper flakes and cumin. cover and blend until smooth. (about 3 sec)
Pour mixture back into stockpot. Place 2nd can of beans and broth into blender and puree until smooth, then add to stockpot.
Add third can of beans (NOT pureed), rotel, and corn. Bring up to a boil, then simmer 30 min to an hour.
