3 c. flour
2 c. sugar
2 t powder
1 t soda
1/2 t salt
1/2 lb unsalted butter, melted and cooled
2 xlg eggs
3/4 c. whole milk
2 t pure vanilla extract
2 mashed ripe bananas
1 med diced ripe banana
1 c. small diced walnuts or pecans
1 c. granola
(optional 1 c. sweetened shr. coconut)
(optional dried banana chips, granola, or shredded coconut for topping)
Preheat oven to 350
Line 18 lg muffin cups with paper liners. Sift flour, sugar, soda, powder, and salt. Add melted butter and blend.
Combine the eggs, milk, vanilla, and mashed bananas, and add flour and butter.
Scrape bowl and blend well, do NOT overmix.
Fold in the diced bananas, nuts, granola (and coconut if desired). Spoon batter into cupcakes (and top with toppings if desired)
Bake 25-30 minutes. until tops are brown and toothpick comes out clean.
